Peachy Coconut Overnight Oats

Ingredients
1/3 cup rolled or quick oats
1 tbsp chia seeds
1 cup unsweetened organic soy milk
1 teaspoon unsweetened coconut flakes
Dash of cinnamon
2 tablespoons plain Greek yogurt
Canned California Clingstone peaches (in juice or water, rinsed)
1 teaspoon maple syrup optional
Directions
1) Start with a layer of oats and the chia seeds
2) Add the soy milk, cinnamon, and 1/2 the coconut flakes
3) Add 3 or 4 sliced peaches
4) Top with yogurt, more sliced peaches, and the other 1/2 of the coconut flakes
