Easy Muesli

Submitted by Brooke Bulloch, RD and mom.
I don't know much about the history of muesli aside from it's Eurpean origins. And no doubt renditions of it have evolved over the years. Muesli is my short-on-time, it's close-enough-to-granola go-to when I'm in a rush. It's essentially granola without the oil, vanilla, and baking. But it's actually pretty tasty and versatile.
I love that Muesli combines the sweetness of dried fruit and the crunchy, nutty flavours from nuts and seeds. And you can make so many variations of it! Here's my take on muesli:
Ingredients:
- 2 cups rolled oats
- 1/2 cup shaved or sliced almonds
- 1/4 cup pumpkin seeds
- 1/4 cup unsweetened shredded coconut
- 1/4 cup raisins
- 1/4 cup dried cranberries
- 1/4 cup chopped walnuts
- 1 tbsp maple syrup
- 1 tsp cinnamon
- 2 pinches of salt
Directions:
Add all the ingredients to a mixing bowl and stir well. Store in an air-tight container.
Serve with milk or yogurt, add to hot or cold cereal, or make overnight oats with it. Enjoy
