Herb and Parmesan Baked Chicken

I have been making this for years, just throwing portions and ingredients together. A recent client had reminded me just how boring plain chicken breast can be and it motivated me to write it down and get this recipe out there! At Food to Fit, we believe that meals should remain enjoyable and tasty as a key factor to sustainable nutrition. Perk up your chicken and your taste buds! Good Food, Good Health.

Pre-heat oven to 375F

Ingredients

3 large chicken breasts, bonelss and skinless

1 cup milk

1/3 cup Panko crumbs

1/4 cup parmesan cheese, grated

1 teaspoon parsley, dried

1 teaspoon basil, dried

1 teaspoon oregano, dried

1/4 tsp garlic powder

Directions

1) Pour the milk into a shallow bowl and let the breasts soak in the milk for a few minutes

2) In another shallow bowl, add all the dry ingredients and mix well

3) Take each, milk-soaked chicken breast and roll it in the dry Panko/herb/cheese mix until fully covered

4) Place on a parchment-covered baking sheet and bake at 375F for ~35 minutes, or until the internal temperature of the chicken is 165F

Serve with a side of green vegetables and brown rice or roasted potatoes to balance it out.
