Maple Pumpkin Muffins

Muffins can make an easy, grab-and-go snack for families. Too often, store-bought muffins and pre-made muffin mixes are full of sugar, processed fat, and fillers. Making muffins at home is easy and you get to be in control of what goes in them. During the Fall season I take advantage of all the fresh pumpkin I can get! If the fresh, small, baking pumpkins aren't available to you, choose 100% pure canned pumpkin (no added sugar) for a convenient alternative.       Pre-heat oven to 350F Ingredients: 2 cups whole wheat flour 2 tsp baking powder 1 tsp cinnamon, ground 1/2 tsp nutmeg, ground 2 large eggs 3/4 cup unpacked brown sugar 1/2 cup pure maple syrup 1 1/2 cups pure, unsweetened pumpkin 1/4 cup vegetable oil (for...

Apple Cinnamon Breakfast Muffins

Muffins definitely have a healthy hallow about them. Unfortunatley store-bought or fast-food muffins often aren't much better than the doughnuts sitting on display next to them. Break your morning fast with a balanced source of monounsaturated fats, whole grains, fruit, and natural sugars. Take it to-go with a protein shake, a yogurt, or a hard boiled egg.   Pre-heat oven to 350F Dry Ingredients: 1.5 cups whole wheat flour 1 cup whole oats 2 teaspoons...

Peppermint White Chocolate Popcorn

Indulgent but not heavy; a suitable option for those with a gluten allergy or sensitivity.   Ingredients: ~12 cups of air-popped or stovetop popcorn (~ 1/2 to 2/3 cup popcorn seeds) 5 large candy canes, crushed using a mortar and pestle or a rolling pin 1 - 226 gram bag of white chocolate chips (or 7 ounces of white chocolate wafers) Sea salt   Directions: 1) Pop the popcorn and set aside to cool. 2) Crush the candy canes and set aside. 3) Over a double boiler, melt the chocolate chips. Pour the melted chocolate over the popcorn, add the crushed candy cane and mix well. While stirring, add a...
