Frozen Yogurt Pops

The warm weather is here, and was certainly noted after a day at the lake paddle boarding, boating and fishing under a hot sun! Although hydration is #1 on my mind during a hot day, I must say #2 is a cool, sweet treat. With so many options on the market, it's a tough decision to make, especially when trying to avoid excess sugar or low calorie sweeteners, saturated fat, and filler ingredients. Of course, there is a time and a place for a high calorie, super satisfying, frozen novelty. However, the box of 12 in my freezer quickly empties as I start including 1 or 2 as part of my every day. This is a simple, satisfying, 3-ingredient frozen novelty that anyone can make at home!   Ingredients: 1 1/2 cups plain 2% yogurt 1 1/2 to 2 cups...

Lentil, Oat and Chocolate Chip Cookies

Lentils are a rich source of fibre, folate, protein, and iron. They're inexpensive, very filling, and a great vegetarian alternative to meat, fish or poultry. This recipe uses a split lentil because they cook much faster than a whole lentil and they puree nicely. The cookie itself, although a healthier option, is still considered a treat. It can be matched with cheese, fruit, or nuts to make a more balanced snack.   Preheat oven to 350 F Ingredients: 3/4 cup unbleached all-purpose flour 3/4 cup whole wheat flour 1 teaspoon baking soda 1 cup granulated sugar 1/3 cup unsalted butter, softened 1 egg 1/3 cup unsweetened applesauce 1 teaspoon pure vanilla extract ~1 cup lentil puree 1 1/2 cups whole oats 1 cup semi-sweet dark...

Coconut Flour Banana Blueberry Muffins

Coconut flour is a wonderful gluten-free, fibre-rich alternative to wheat flour for use in baking. However, it cannot simply be substituted 1:1 in place of grain-based flours because coconut flour is super absorbent and requires additional moisture. Coconut flour is a very rich source of fibre at 10 grams per 1/4 cup, almost triple the amount found in 1/4 cup of whole wheat flour! It takes some getting used to, but I enjoy the variety of flavours, textures, and nutritional value coconut flour offers.   Pre-heat oven to 350F Dry Ingredients: 1/2 cup coconut flour 1/2 teaspoon baking soda 1/2 teaspoon baking powder 1/2 teaspoon nutmeg Wet Ingredients: 2 ripe bananas 1/4 cup extra virgin olive oil 4 large eggs 1/3 cup honey 1/2...
