Herb and Parmesan Baked Chicken
I have been making this for years, just throwing portions and ingredients together. A recent client had reminded me just how boring plain chicken breast can be and it motivated me to write it down and get this recipe out there! Pre-heat oven to 375F
3 large chicken breasts, bonelss and skinless
1 cup milk
1/3 cup Panko crumbs
1/4 cup parmesan cheese, grated
1 teaspoon parsley, dried
1 teaspoon basil, dried
1 teaspoon oregano, dried
1/4 tsp garlic powder
1) Pour the milk into a shallow bowl and let the breasts soak in the milk for a few minutes
2) In another shallow bowl, add all the dry ingredients and mix well
3) Take each, milk-soaked chicken breast and roll it in the dry Panko/herb/cheese mix until fully covered
4) Place on a parchment-covered baking sheet and bake at 375F for ~35 minutes, or until the internal temperature of the chicken is 165F
Serve with a side of green vegetables and brown rice or roasted potatoes to balance it out.
